Couscous meatballs

Ingredients for 4 servings:

  • 250 g couscous
  • 500 ml water
  • 1 red bell pepper(s), diced
  • 8 tomatoes, dried, diced
  • 2 tsp mustard
  • 2 tsp salt
  • n. B. Pfeffer
  • 2 tsp paprika powder
  • 2 tsp vegetable broth
  • 3 tbsp breadcrumbs
  • 2 tsp soy flour
  • 1 tbsp tomato paste

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Bring the couscous and diced sun-dried tomatoes to a boil with the water. Boil for 1 minute, then remove from the heat and let stand with the lid on for about 10 minutes. Then remove the lid and let cool. Add the remaining ingredients and knead with your hands. Then form into small meatballs. Heat oil in a pan and fry the meatballs until golden brown on both sides.
