Couscous "Orientale"

Ingredients for 4 servings:

  • 200 g apricot(s), dried
  • 200 g couscous
  • 100 g almonds, chopped and roasted
  • 2 tsp curry
  • 1 chili pepper(s), finely diced
  • 2 spring onions, cut into fine rings
  • 250 ml water
  • 3 tbsp butter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

fruity-spicy variant

Lightly sauté the onion rings with a little butter in a pan, then toast the curry powder in the same pan. Add water and salt. Bring the water to a boil and stir in the couscous. Continue cooking as directed on the package. Meanwhile, finely dice the chilies and slice the apricots. Toast the almonds. Once the couscous is cooked, stir in the remaining butter, chilies, apricots, and almonds into the seeds. Season to taste.
