Quick vegetable soup with rice and minced meat

Ingredients for 4 servings:

  • 75 g bacon
  • 2 onions
  • 500 g minced meat (mixed)
  • salt and pepper
  • 1 package of soup vegetables, frozen
  • 1 liter of broth
  • 75 g rice
  • curry powder
  • 1 cup of cream
  • Paprika powder, sweet
  • Mustard
  • some tomato paste
  • 1 garlic clove(s)
  • 1 bay leaf
  • Mixed herbs

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dice the onions and fry them with the bacon in a large pot. Add the minced meat and fry. Season generously with salt, pepper, and paprika. Add the chopped garlic clove, a little mustard, and tomato paste. Add the vegetables and sauté briefly. Deglaze with the stock. Add the uncooked rice, curry powder (can be omitted), bay leaf, and mixed herbs. Let everything simmer for 15-20 minutes (depending on the type of rice). Just before the end, stir in the cream and season the soup to taste.
