Couscous salad with cucumber, apple and feta

Ingredients for 3 servings:

  • 1 onion(s), red
  • 2 apples
  • 1 cucumber(s)
  • 1 pack of feta cheese, approx. 200 g
  • 200 ml water
  • 2 lemons
  • 200 g couscous
  • Salt and pepper from the mill

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 25 minutes

Finely dice the red onion. Wash the apples and dice them with the skin on (I use fairly sweet apples for a flavor contrast). Peel the cucumber and dice the feta cheese. Meanwhile, bring water to a boil (I use a kettle). Squeeze the lemons. You can also add a little lemon juice from the bottle. Measure 200 ml of the boiling water and mix it with the lemon juice. Place the couscous in a large bowl, pour over the hot lemon water, and let it swell. Always use an equal amount of couscous and liquid so that the couscous is just covered and not floating. Once the couscous has swollen, season it with salt and pepper and mix well. Stir in the remaining diced ingredients. This fresh couscous salad tastes great both warm and from the fridge, especially in summer.
