Summer salad with grilled peaches and grilled zucchini

Ingredients for 5 servings:

  • 2 zucchinis
  • 6 peach(s)
  • 4 small cucumbers
  • 200 g arugula
  • 3 scoops of buffalo mozzarella
  • 100 ml olive oil
  • 2 tsp chili flakes
  • 2 lemon(s), juice and zest
  • 5 g marjoram
  • some salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Cut the zucchini into strips. Halve the peaches. Peel the cucumbers, remove the seeds, and cut into small cubes. Brush the zucchini with oil and season with salt and pepper. Mix the olive oil with chili flakes, lemon zest, and lemon juice to make a dressing. Season with salt and pepper. Wash the arugula. Grill the zucchini and peaches. Slice the peaches. Slice or tear the buffalo mozzarella. Mix the cucumber, arugula, and mozzarella with the dressing. Add the zucchini and peaches and garnish with a little marjoram.
