Couscous salad with mango, avocado and mozzarella

Ingredients for 2 servings:

  • 120 g couscous
  • some vegetable broth
  • 1 mango(s)
  • 1 avocado(s)
  • 1 ball of mozzarella
  • 2 spring onions
  • 3 tbsp olive oil
  • ½ lemon(s)
  • lots of basil
  • lots of salt
  • Garlic
  • pepper
  • chili powder
  • 1 pinch(s) of sugar or xylitol

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Summer salad

Pour 1.5 times the amount of boiling water over a small cup of couscous (approx. 100-120 g). Add a little vegetable stock (or salt, garlic, and pepper) and let the couscous swell and cool. Chop the mango, avocado, mozzarella, and spring onions into small pieces and add to the couscous. Mix with the cold couscous and season to taste with the remaining ingredients. Since the couscous itself is very neutral in flavor, you’ll need plenty of herbs and spices! Always mix thoroughly and season to taste.
