Couscous with Vegetable Curry
The perfect couscous with vegetable curry recipe with a picture and simple step-by-step instructions.
- 250 g Couscous
- 540 ml Water hot
- 1 tsp Salt
- 40 ml Sunflower oil

- 2 Fresh onions
- 1,5 tsp Curry
- Oil
- ———————————————
- 1 Apple
- Yellow peppers
- Broccoli florets
- Celery
- Carrot
- 100 ml Boiling water
- 2 pinch Pepper
- 0,5 tsp Salt
- ———————————————-
- 3 Tomatoes
- 150 g Peas
- 1) Boil water, stir in salt and oil. Pour the boiling water over the couscous and set aside.
- 2) Dice the onion, heat the oil in the pan. Briefly sauté the onion with the curry in the pan until translucent.
- 3) Cut the apple into small, fine cubes. Cut the rest of the vegetables (approx 450g) into bite-sized pieces. Add the vegetables, water, pepper and salt to the onions and let simmer. (approx 10-15min)
- 4) Cut the tomatoes into eighths and place them in the vegetable pan with the peas. Let simmer for another 5 minutes. To taste
