Couscous with Vegetable Curry

The perfect couscous with vegetable curry recipe with a picture and simple step-by-step instructions.

  • 250 g Couscous
  • 540 ml Water hot
  • 1 tsp Salt
  • 40 ml Sunflower oil
  • ———————————————–
  • 2 Fresh onions
  • 1,5 tsp Curry
  • Oil
  • ———————————————
  • 1 Apple
  • Yellow peppers
  • Broccoli florets
  • Celery
  • Carrot
  • 100 ml Boiling water
  • 2 pinch Pepper
  • 0,5 tsp Salt
  • ———————————————-
  • 3 Tomatoes
  • 150 g Peas
  1. 1) Boil water, stir in salt and oil. Pour the boiling water over the couscous and set aside.
  1. 2) Dice the onion, heat the oil in the pan. Briefly sauté the onion with the curry in the pan until translucent.
  1. 3) Cut the apple into small, fine cubes. Cut the rest of the vegetables (approx 450g) into bite-sized pieces. Add the vegetables, water, pepper and salt to the onions and let simmer. (approx 10-15min)
  1. 4) Cut the tomatoes into eighths and place them in the vegetable pan with the peas. Let simmer for another 5 minutes. To taste
