Ingredients for 1 servings:

  • 75 g butter, room temperature
  • 60 g sugar
  • 1 pinch of salt
  • 1 egg(s)
  • ½ lemon(s), untreated, zest
  • 150 g flour
  • 100 g cranberries, chopped, dried

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Cream the butter and sugar until fluffy. Add the salt, egg, and lemon zest, and mix with the flour to form a dough. Refrigerate for 30 minutes. Chop the cranberries and place them in a deep dish. Form the dough into small balls and roll them in the berries. Preheat the oven to 200°C. Flatten the dough balls slightly on a baking sheet lined with parchment paper. Bake the cookies in the oven for 10 minutes.
