Cranberry Dream

The perfect cranberry dream recipe with a picture and simple step-by-step instructions.

For the ground:

  • 5 Eggs
  • 125 g Sugar
  • 150 g Flour
  • 2 tsp Baking powder

For the cream:

  • 1 packet Custard powder
  • 4 tbsp Sugar
  • 400 ml Milk
  • 50 g Powdered sugar
  • 300 g Butter

Filling:

  • 1,5 Glasses Cranberries / Cranberries
  • Hazelnut brittle

First step for the cream:

  1. Mix the pudding powder with 4 tablespoons of sugar in 100ml milk until smooth. Heat the rest of the milk (300ml), add the mixed pudding and simmer for 1 minute. Remove from the stove and let it cool (stir every now and then so that no skin forms!).

Ground:

  1. Separate the eggs and beat the egg whites until stiff. Slowly add sugar (125gr) and salt. Gradually stir in the egg yolks. Then slowly sift the flour and baking powder into the egg mixture and fold in. Fill the finished dough into a springform pan and bake at 180 degrees (electric stove) or 160 degrees (convection) for about 20 minutes.

Second step cream:

  1. Beat the powdered sugar with the butter (should be as soft as possible) until creamy. Gradually stir in the now cooled pudding, tablespoon at a time. Put the finished buttercream in the fridge for 5 minutes!

Completion:

  1. Divide the floor horizontally twice. Place 2/3 of the cranberries on the lowest part and place the middle part on top. Now spread about 1/3 of the buttercream on this and put on the top base as a lid. Brush the entire cake with the rest of the buttercream.In the middle of the cake, put the remaining cranberries (can also be made in the shape of a heart or star, etc.) and sprinkle the outer edge of the cake with brittle. Chill the cake before serving.
