Cranberry Mimosa Cocktail

Ingredients for 4 servings:

  • 240 ml cranberry juice, sweetened
  • 12 cranberries, fresh or frozen, thawed
  • 4 sprigs rosemary
  • 1 bottle of sparkling wine, dry or Crémant or Champagne
  • ½ lime(s)
  • 2 tsp sugar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Sprinkle the sugar on a saucer. Zest the rims of the champagne flutes (or stemware) with the halved lime, then dip them in the granulated sugar. This creates a beautiful sugar rim. Pour approximately 60 ml of cranberry juice into each glass and top up with the rest of the champagne. Note: Both the cranberry juice and the champagne should be ice-cold! Pierce the cranberries with a toothpick and skewer two cranberries each with a rosemary sprig. Trim the sprig and place it across the glass. Serve the drinks immediately.
