Cranberry-Red Cabbage II

Ingredients for 4 servings:

  • 1 jar red cabbage (blue cabbage)
  • 1 small onion(s), red
  • 40 g butter
  • 2 tbsp sugar
  • 4 tbsp red wine vinegar or balsamic vinegar
  • 200 g cranberries, from the jar
  • 150 ml vegetable stock
  • 1 bay leaf
  • 5 juniper berries
  • ½ tsp ginger powder
  • Salt and pepper, from the mill

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

for a jar of red cabbage with 720ml (filling quantity 680 g) or can

Sauté the onion, sprinkle with sugar, and let it melt. Deglaze with 100g cranberries, vinegar, and the stock. Add the red cabbage (jar), juniper berries, bay leaves, and ginger. Cover and simmer over medium heat for 30 minutes. Stir in the remaining cranberries and season with salt and pepper.
