Cream cheese pralines in a garlic brittle coating

Ingredients for 20 servings:

  • 5 tbsp nuts, mixed, chopped
  • 1 chili pepper(s), dried
  • 2 large garlic cloves
  • 1 tsp salt
  • 1 tbsp sugar
  • 200 g double cream cheese

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour

Chop the garlic cloves and crush them slightly with the salt. Lightly brown the chopped nuts in a dry pan with the roasted, crumbled chili. Once cooled, mix with the garlic and salt mixture. Caramelize the sugar in the pan until light yellow. Add the mixture with the nuts and stir in. This must be done quickly so the garlic doesn’t burn and become bitter! Empty the contents of the pan onto a prepared piece of baking paper and allow to cool completely. Form the cream cheese into balls (approx. 2 cm in diameter) and roll them in the nut and garlic mixture. Refrigerate until ready to serve and serve in praline capsules. The spicy brittle mixture is also suitable as a salad topping. It can be stored in a sealed container for about 10 days.
