Cream cheese with pineapple, green pepper and nuts

Ingredients for 1 servings:

  • 200 g cream cheese
  • 100 g pineapple, from the can
  • 50 g bell pepper(s), green
  • 2 spring onions
  • ½ tsp lemon pepper
  • ½ tsp salt
  • 50 g pecans or walnuts

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Dip or spread

Chop the nuts, bell peppers, and spring onions. Drain and chop the pineapple, skimming off some of the liquid. In a bowl, combine the cream cheese and seasonings, add the chopped ingredients, and mix well. Let it sit in the refrigerator until well combined, then stir again and season to taste before serving. Don’t let it sit for too long, or the bell peppers will be too overpowering. Serve with crackers or nachos as a dip, or as a spread.
