Ingredients for 4 servings:
- 500 g carrot(s)
- 2 small apples
- 2 small onions
- 250 ml broth (delicatessen, instant)
- 4 tbsp mayonnaise (heaped tbsp)
- 2 tsp horseradish (freshly grated, slightly heaped tsp)
- 6 tbsp chives, in rolls
- 4 slice(s) bread(s) (wholemeal bread)
- salt and pepper

….. a spicy, healthy and light spread!
Peel the carrots, apples, and onions. Quarter and core the apples. Cut everything into small cubes and simmer in the broth, covered, for about 20 minutes over medium heat. Shortly before the end of the cooking time, let the liquid evaporate completely in an uncovered pot. Let cool. Finely puree the vegetables, stir in the mayonnaise, 4 tablespoons of chives, and the horseradish, and season with salt and pepper. Spread the cream thickly on the bread and serve sprinkled with chives. The cream is also perfect for buffets as a fine dip for raw vegetables and crackers, or as a spread on pumpernickel.
