Cream of Carrot Soup with Ginger Topping

The perfect cream of carrot soup with ginger topping recipe with a picture and simple step-by-step instructions.

  • 1 kg Carrots
  • 2 tbsp Muscovado sugar
  • 2 El Flour smooth
  • 0,75 liter Water
  • 1 El Salt
  • 1 pinch Pepper
  • 0,5 liter Milk
  • 4 big pieces Ginger
  1. Peel and chop the carrots.
  2. Heat the sugar with butter, caramelize the carrots. Dust with flour, pour salts with water – cook until soft. Puree the cooked carrots and dilute with water to the desired consistency.
  3. Meanwhile, boil the milk with the ginger pieces (at least 1/2 hour). Then strain through a sieve.
