Cream of Carrot Soup with Ginger Topping

- 1 kg Carrots
- 2 tbsp Muscovado sugar
- 2 El Flour smooth
- 0,75 liter Water
- 1 El Salt
- 1 pinch Pepper
- 0,5 liter Milk
- 4 big pieces Ginger
- Peel and chop the carrots.
- Heat the sugar with butter, caramelize the carrots. Dust with flour, pour salts with water – cook until soft. Puree the cooked carrots and dilute with water to the desired consistency.
- Meanwhile, boil the milk with the ginger pieces (at least 1/2 hour). Then strain through a sieve.
