Cream of potato soup

Ingredients for 4 servings:

  • 1 onion(s)
  • 20 g butter
  • 500 g potatoes
  • 500 ml milk
  • 500 ml water
  • 2 tbsp crème fraîche
  • e.g. salt and pepper
  • possibly chopped parsley, if required
  • croutons, if required

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

simple and vegetarian

First, peel and quarter the onion. Then, peel and dice the potatoes. Heat the butter in a saucepan. Sauté the onion quarters until translucent. Add the diced potatoes and sauté for about 5 minutes. Now add the water and milk and simmer the soup for about 15 minutes. Once the potatoes are cooked, puree the soup with a hand blender. To enhance the soup’s texture, add crème fraîche. Finally, season with salt and pepper. If desired, garnish with some chopped parsley and croutons.
