Ingredients for 4 servings:
- 750 g pumpkin(s)
- 1 onion(s)
- 20 g fat
- ½ liter meat broth
- ½ liter of milk
- 1 cup of sweet cream
- 100 g cheese, grated
- Salt
- Pepper, white
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Peel and roughly dice the pumpkin. Peel and finely dice the onion. Brown both in melted fat, then add the meat broth and milk and simmer for about 20-30 minutes. Then puree with a hand blender. Add the cream and simmer for another 5 minutes. Season with salt and pepper. Serve the soup and sprinkle with grated cheese.
