Creole Frittata

Ingredients for 4 servings:

  • 250 g peeled king prawns
  • 8 eggs
  • 100 ml coconut milk
  • 200 g mango(s), diced
  • 100 g onion(s), cut into strips
  • 200 g Chinese cabbage, cut into strips
  • 2 tbsp oil (peanut or sesame oil)
  • chili powder
  • Garlic
  • Curry powder or curry paste
  • Ginger powder
  • Salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Brown the king prawns and place them in a fireproof casserole dish or cast iron pan. Lightly salt them. Sauté the onion and Chinese cabbage in the same pan until the Chinese cabbage collapses. Add them to the casserole dish. Briefly sauté the mangos with chili and garlic, then add them to the pan and mix well. Blend the eggs with the coconut milk, a little salt, curry powder, and ginger using a hand blender. Pour over the mixture in the casserole dish and bake at 200°C (top/bottom heat) for about 20 minutes, until the frittata is well browned and risen.
