Crispy baked potatoes

Ingredients for 2 servings:

  • 500 g young, waxy potatoes
  • 5 tbsp olive oil
  • 1 tsp salt
  • 1 tsp herbs de Provence
  • 1 ½ tsp paprika powder
  • ½ tsp oregano
  • 2 tsp coarse sea salt for sprinkling

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Preheat the oven to 180-200 degrees Celsius (convection oven). Wash the potatoes, pat them dry, and cut them into approximately 0.5 cm thick slices. Place the potatoes on a baking sheet lined with baking paper. Mix together the other ingredients and brush the potato slices with the mixture. Place the sheet in the oven for 30-45 minutes. Remove the potatoes, depending on how crispy you like them. Then sprinkle the slices with coarse sea salt. This recipe also works very well with sweet potatoes and potato wedges. However, I then mix the oil and potatoes together in a bowl.
