Crispy chocolate croissants

Ingredients for 1 servings:

  • 200 g flour
  • 2 tsp baking powder
  • 60 g sugar
  • 1 pinch of salt
  • 5 tbsp milk
  • 5 tbsp oil
  • 125 g curd cheese, 20%
  • 150 g dark chocolate
  • 1 egg yolk
  • some water

Instructions

Working time approx. 30 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 10 minutes

makes 12 delicious croissants

Finely chop the dark chocolate. Mix the sugar with the milk, oil, quark, and a pinch of salt. Mix the flour with the baking powder and sift it over the dough. Add the chopped chocolate and knead into a smooth dough. (Use the dough hook on a hand mixer.) Let the dough rest in the refrigerator for about 15 minutes. Roll out the dough on a floured surface into a rectangle (40 x 20 cm) and cut into 6 rectangles. Then cut these diagonally into triangles. Roll each triangle tightly from the narrow side to the tip (not loosely, rather tightly) and shape into croissants. Place the croissants on a baking tray lined with baking paper. Beat the egg yolk with a little water until smooth and brush the croissants with it. Bake in a preheated oven at 180°C (top/bottom heat) on the middle rack for about 20-25 minutes until golden brown. Let cool and dust with powdered sugar, if desired.
