Crispy Oven Rolls

The perfect crispy oven rolls recipe with a picture and simple step-by-step instructions.

Pre-dough

  • 200 g Water
  • 10 g Sugar
  • 21 g Yeast
  • 135 g Flour

dough

  • 200 g Whole wheat flour
  • 1 Egg
  • 3 g Salt
  • 3 g Baking malt

The pre-dough:

  1. In the mixing bowl, dissolve the yeast with the sugar in the warm water.
  2. Add the flour and stir in.
  3. Let rise in a warm place for about 20 minutes.

The dough:

  1. When the pre-dough has at least doubled, add the wholemeal flour, egg, salt and baking malt and stir everything together (approx. 3 minutes). – It should be a soft, sticky mass.
  2. Divide the dough into portions with a trowel (wet in cold water).
  3. Either place in bun tins or on a baking sheet.

In the oven:

  1. Put in the cold oven and let rise at 50 ° C for 20 minutes.
  2. Then bake at 180 ° C for 20 minutes.
  3. Turn the rolls over (bottom facing up) and bake for 10 minutes at 180 ° C.

Tip:

  1. The rolls can be made with wheat flour but also with spelled flour.
