Crispy Oven Rolls
The perfect crispy oven rolls recipe with a picture and simple step-by-step instructions.
Pre-dough
- 200 g Water
- 10 g Sugar
- 21 g Yeast
- 135 g Flour
dough
- 200 g Whole wheat flour
- 1 Egg
- 3 g Salt
- 3 g Baking malt
The pre-dough:
- In the mixing bowl, dissolve the yeast with the sugar in the warm water.
- Add the flour and stir in.
- Let rise in a warm place for about 20 minutes.
The dough:
- When the pre-dough has at least doubled, add the wholemeal flour, egg, salt and baking malt and stir everything together (approx. 3 minutes). – It should be a soft, sticky mass.
- Divide the dough into portions with a trowel (wet in cold water).
- Either place in bun tins or on a baking sheet.
In the oven:
- Put in the cold oven and let rise at 50 ° C for 20 minutes.
- Then bake at 180 ° C for 20 minutes.
- Turn the rolls over (bottom facing up) and bake for 10 minutes at 180 ° C.
Tip:
- The rolls can be made with wheat flour but also with spelled flour.
