Crispy Rooster with Orange Crust

Ingredients
 

  • 1,1 kg Chicken
  • 1 tbsp Vegetable broth
  • 2 Squeezed mandarins / oranges
  • Paprika powder
  • Sea salt from the mill

Instructions
 

  • I pre-cook the rooster in hot vegetable stock for 10 minutes, so it will be much juicier. Preheat the oven to 180 degrees
  • Now let it cool down briefly and then divide it in 2 halves. Put 5 tablespoons of stock in a shallow casserole dish, put the meat in and season well with paprika and salt
  • Now put the roasting pan in the oven and bake for 10 minutes, from now on for 10 minutes alternately pour orange juice and chicken broth over the meat and repeat until the desired degree of browning has been achieved. This takes about 1 hour.
  • Now put some broth and orange juice in the baking dish, briefly bring this stock to the boil and simmer to make a sauce. We also ate mixed vegetables and boiled potatoes
