Crispy salmon on a bed of vegetables

Ingredients for 3 servings:

  • 500 g salmon, fresh, with skin
  • 1 bunch of spring onions
  • 2 bell peppers, colored
  • 1 lemon(s)
  • salt and pepper
  • Sugar
  • olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Preheat the oven to 230°C. Finely chop the spring onions and bell peppers and place them in a large baking dish. Pour over the lemon and oil. Season everything with salt, pepper, and sugar. Mix everything together with your hands. Wash the salmon, pat dry, and cut into pieces. Place the pieces on top of the vegetables and mix everything well again. Add a little more oil, if desired. Make sure the salmon is skin-side up. Cook everything in the oven for about 15 minutes. Remove the salmon and carefully peel off the salmon skin. Be careful, as everything will be hot. Now turn the peeled skin so that the soft side is on top, place it on the salmon pieces, season with salt again, and return it to the oven for about 10-15 minutes. A fresh baguette goes perfectly with this dish.
