Ingredients for 3 servings:
- 1 small onion(s)
- 400 g chicken breast fillet(s)
- 2 cups rice
- 1 can of corn, medium size
- 1 large red bell pepper(s)
- 1 small can of peas
- 2 tbsp Vegeta spice mix (Croatian spice, alternatively instant vegetable broth works)
- 1 tbsp tomato paste
- salt and pepper
- Paprika powder, sweet
- oil

It’s best to prepare everything in advance: Dice the onion, shred the meat, and dice the bell pepper. Drain the corn and peas and divide the rice into portions. Fry the diced onion in a little oil. Add the meat and fry until cooked through. Then add the rice, stir briefly, and pour over the water. The rule here is: for 2 cups of rice, add 4 cups of water; always double the amount! It’s best to add the Vegeta or vegetable stock at the same time and let it simmer gently, stirring occasionally. After about 10 minutes, add the tomato paste and paprika powder to taste, stir, and continue simmering. If necessary, add a little more water if the rice has absorbed all the liquid but isn’t yet cooked. Taste the rice occasionally to see if it’s almost done and season to taste. Just before the end, add the corn, peas, and bell pepper pieces, season again, and serve. Dobar Tek – Enjoy!
