Crocodile on Bed of Vegetables with Potato Cream

The perfect crocodile on bed of vegetables with potato cream recipe with a picture and simple step-by-step instructions.

For the sauce:

  • 1 kg Seasonal vegetables
  • 1 kg Potatoes
  • 200 g Onions
  • 3 Pc. Garlic cloves
  • 1 pinch Nutmeg
  • Salt and pepper
  • 1 pinch Dried chilli
  • 200 g Butter
  • 1 Pc. Onion
  • 1 Pc. Leek
  • 200 g Cream
  • 0,5 Pc. Lemon fruit juice
  • 1 Pc. Tangerine fruit juice
  • 200 ml White wine
  1. Fry the crocodile meat briefly in hot butter, then bake in the preheated oven at 140 degrees for about 20 minutes (if the crocodile tail is thicker, please leave it in a little longer), drizzle with butter in the oven and season with salt and pepper after about 5 minutes .
  2. Sweat the butter in the pan, add the grated garlic and fry the vegetables cut into pieces for about 8 minutes. Season with pepper, salt and, if you like, chilli.

For the sauce:

  1. Fry the diced onion and the small diced leek stick and deglaze with white wine. Add the cream and cook at a low temperature until everything is simmered. Help with a hand blender. Season the lemon juice and tangerine juice with salt and pepper.
