Ingredients for 4 servings:
- 4 slice(s) baguette(s), about finger thick
- 100 g cottage cheese
- 3 tbsp parsley, flat, chopped
- 3 radishes
- 1 stalk(s) spring onion(s), the white part
- some salt and pepper, freshly ground
- 1 clove(s) garlic, optional
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 14 minutes
Slice the parsley and mix with the cottage cheese, seasoning with a little salt. Let it sit in the refrigerator. Thinly slice the radishes and spring onions. Toast the bread under the broiler until crisp and golden brown. For smaller batches, simply toast in a toaster. Rub the bread slices with a clove of garlic, spread the cottage cheese on top, and top with the radishes and spring onions. Sprinkle with salt and freshly ground pepper to taste. Serve immediately to prevent the bread from getting soggy.
