Ingredients for 15 servings:

  • 400 g tomatoes, fresh
  • 1 ball of mozzarella, preferably the full-fat version
  • 2 avocados, ripe
  • 2 shallots
  • herbal salt
  • 1 shot of balsamic vinegar, white
  • 1 dash of olive oil
  • Basil leaves, optional
  • Ciabatta

It’s best to halve the avocados lengthwise, remove the pit, carefully scoop out the flesh with a spoon, and then dice. Dice the shallots, mozzarella, and tomatoes as well. It’s best to drain the water from the tomatoes, otherwise everything will become too mushy. Mix everything together and season with herb salt, olive oil, and white balsamic vinegar. Use the vinegar sparingly, as it can overpower the flavor. Spread everything onto ciabatta slices and garnish with chopped basil leaves.
