Crostini with grilled avocado slices

Ingredients for 4 servings:

  • 1 avocado(s)
  • 150 g cherry tomatoes, small
  • 1 garlic clove(s)
  • 2 stalks of spring onion(s) (onion)
  • 5 slices of baguette
  • Fresh herbs (parsley, oregano, olive oil)
  • 50 g Parmesan, freshly grated or sliced
  • olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Tomato and Parmesan

Halve the cherry tomatoes and place them in a foil packet. Wash the onion and herbs and spin dry. Finely slice the onion and finely chop the herbs. Add everything to the cherry tomatoes and season with salt and pepper. Peel the garlic clove and rub it all over one side of the baguette slices, then brush with olive oil. Halve the avocado, peel it, and thinly slice it. Place the cherry tomatoes, wrapped in foil, on the grill for a few minutes. Briefly grill the avocado and baguette slices on both sides. Top the grilled baguette slices with the avocado slices and scatter the cherry tomatoes over them. Sprinkle with Parmesan cheese and drizzle with a little olive oil, and enjoy warm.
