Crostini with tomatoes

Ingredients for 1 servings:

  • ½ kg tomatoes
  • 3 cloves garlic
  • 4 tbsp olive oil
  • salt and pepper
  • 1 small baguette(s)
  • Thyme

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Place the tomatoes in hot, but not boiling, water, then peel off the skins. Quarter and deseed the tomatoes, then cut into small cubes. Press 2 garlic cloves onto the tomatoes, mix in 2 tablespoons of olive oil, salt, pepper, and thyme. Let them sit for a while. Cut the bread into 12 slices, rub them with the last garlic clove, place them on a baking sheet, and drizzle with a little olive oil. Roast in the oven at 200°C for about 10 minutes. Immediately spread the tomato mixture on top and serve.
