Crumb cake with cherry and quark filling

Ingredients for 1 servings:

  • 100 g butter
  • 150 g sugar
  • 1 egg(s)
  • 300 g flour
  • 1 tsp baking powder
  • 1,000 g morello cherries
  • 150 g sugar
  • 3 eggs
  • 1 packet of vanilla sugar
  • 500 g low-fat curd cheese
  • 2 tbsp semolina

Working time approx. 25 minutes; Total time approx. 25 minutes

Recipe from my mother

Filling: Beat eggs with sugar and vanilla sugar until frothy, add quark, then drizzle in semolina. Dough: Quickly knead the ingredients into crumbles. Spread 2/3 of the crumb mixture onto the bottom of a 26cm springform pan and press down. Place cherries on the bottom and spread the quark mixture over it. Sprinkle the remaining crumbs over the quark mixture. Place the cake on the bottom rack of a preheated oven (200°C or gas mark 3) and bake for about 1 hour. Tip: You can use any other fruit instead of cherries. For example, I mixed currants into the quark, which was also delicious.
