Ingredients for 1 servings:
- 1 piece(s) skate wing, ready to cook, approx. 250 g
- some lemon salt
- 20 g butter
- 20 ml olive oil
- 4 small zucchini, green, approx. 8 – 10 cm long
- 3 m.-large tomato(s)
- 10 olives, black, ripe, no colored
- some salt and pepper, freshly ground to taste
- some basil, for garnishing
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 22 minutes
with zucchini and tomato vegetables and black olives – SIS compatible
Rub the skate wing with lemon salt. Remove the flower and stem from the zucchini and slice. Slice the tomatoes. Heat half of the butter and half of the olive oil together in a saucepan, add the zucchini and sauté briefly. Add a little water and cook for about 5-8 minutes. Just before the end of cooking, add the tomatoes and olives. Heat briefly again. Season with salt and pepper and garnish with the chopped basil leaves. Heat the remaining butter and olive oil together in a pan and fry the skate for about 2-3 minutes on each side.
