Crumbles
The perfect crumbles recipe with a picture and simple step-by-step instructions.
- 650 g Flour
- 200 g Organic butter
- 750 g Milk
- 1 Pck. Vanilla pudding
- 250 g Sugar
- 42 g Yeast fresh
- 1 Piece Organic egg
- 1 Pck. Vanilla sugar
- 1 pinch Salt
- Apricot jam
Yeast dough – makes 12 pieces
- In a small saucepan, heat 250 ml milk and 50 g butter, but should not be hot, if necessary let cool down a little.
- Mix the yeast with 25 g sugar.
- Put 450 g flour, salt, egg, 25 g sugar and the vanilla sugar in a mixing bowl. Pour in the yeast and milk mixture. Knead everything into a smooth dough. Cover and let rest in a warm place for approx. 45 minutes.

- In the meantime, cook the pudding. To do this, stir in the custard powder, 3 tbsp sugar and 100 ml milk until smooth. Boil 400 ml milk in a saucepan, stir in the pudding powder mixture, simmer briefly, stir. Then place the saucepan in cold water and stir frequently until it has cooled down, cover and place in the refrigerator.
Sprinkles
- Put 5,200 g flour, 100 g sugar and 150 g softened butter in a higher bowl and knead with your hands until everything is well mixed and refrigerate for a moment.
Crumbles
- Take the yeast dough out of the bowl and place on a floured surface. Then quarter and shape each piece evenly into a strand and then divide each into 3 pieces. There should be 12 pieces of dough. 2 Cover the tray with baking paper and preheat the stove to 180 degrees top / bottom heating (convection 160 degrees).
- Roll out each piece of dough into a round shape, approx. 10 cm in diameter. Then brush with jam to taste (for me 1 heaped teaspoon), pour pudding on top (1 heaped tablespoon) and finally knead the crumble and sprinkle over it.
- Bake 20 – 25 minutes until the dough browns slightly.
