Ingredients
 

  • 2 kg Plums
  • 400 g Wheat flour
  • 195 g + 1 tbsp sugar
  • 1 pinch Cinnamon powder
  • 245 g Butter
  • 1 tsp Baking powder
  • 1 pack Vanilla sugar
  • 1 medium Egg
  • 2 tbsp Breadcrumbs

Instructions
 

  • For the dough, mix 250 g of wheat flour with baking powder, sieve on the work surface and make a well in the middle. Add 65 g sugar, vanilla sugar and egg and mix with part of the flour to a thick paste. Cut 125 g of cold butter into pieces and add. From the center, quickly knead all the ingredients into a smooth dough. If the dough sticks, put it in the refrigerator for a while. Roll out the dough on a greased baking sheet and sprinkle with breadcrumbs. For the topping, wash the plums, drain them well, rub dry, stone and cut the halves a little at the top. Place the plums on the dough like scales with the inside facing up. Mix 30 g sugar with cinnamon powder and sprinkle on top. Knead 120 g cold butter with 120 g wheat flour to make crumble and sprinkle over the plums. Put the baking sheet into the preheated oven and bake there at 220 degrees for about 30 to 35 minutes.
