Ingredients for 4 servings:

  • 500 g Greek yogurt
  • 200 ml cream
  • 80 g xylitol (sugar substitute)
  • 1 pinch of vanilla powder
  • 1 tbsp cinnamon powder
  • 20 g dark chocolate
  • 3 spiced speculatius cookies
  • Caramel sauce

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

This recipe is designed for an ice cream maker. I have one with a 2 L bowl and compressor. Finely chop the chocolate with a knife. Crumble the speculatius biscuits (not too finely) and set both aside. Place the remaining ingredients in a mixing bowl and mix thoroughly. Pour the mixture into the ice cream maker and run it. After 2/3 of the cooling time, add the chocolate pieces and speculatius biscuits and run until the end. When serving, drizzle the ice cream with a little caramel sauce. If the cinnamon ice cream is eaten immediately after preparation, the speculatius biscuits will still be crispy. The longer the ice cream stands, the moister they become.
