Ingredients for 2 servings:

  • 230 g potatoes
  • 150 g celeriac
  • 1 tbsp potato flour
  • 1 tsp spice mix with paprika, chili, pepper, marjoram and oregano
  • ¼ tsp salt
  • Extra virgin olive oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Peel the potatoes and dice them. Dice the celery. First, put the celery in a food processor and chop finely, then add the potatoes, the spice mix, and salt. Continue chopping. Add the potato flour and chop everything finely to create a batter for frying. Heat the olive oil in a pan, not too hot, and use a tablespoon to add a little batter to the pan, smooth it out, and fry until brown and crispy on both sides. This takes about 8-10 minutes in total. I got 4 large pancakes from the batter. I served it with tzatziki and tomatoes as a side dish.
