Ingredients for 1 servings:
- 2 eggs, hard-boiled
- 2 sausages (mini chicken wiener sausages, 27 g each)
- 1 tbsp apple cider vinegar
- some water, hot
- 1 tbsp mustard, hot
- some salt and pepper, freshly ground
- 1 small gherkin(s)
- 1 tsp, sautéed capers
- 200 g cucumber(s)
- 1 tomato(s)
- some herbal salt
- Pepper, freshly ground
- 1 tbsp chives, or onion greens

Quickly made, with a side dish of fresh cucumbers and tomatoes, this is a SIS or low carb dinner for the warmer season
Halve the eggs, remove the yolks, and place them in a bowl. Mix with a little water, vinegar, and mustard, as well as salt and pepper, to make a dressing. Thinly slice the sausages and gherkin, and dice the egg whites. Add everything to the dressing along with the capers. Season again if desired. Slice the cucumber and tomato and arrange them around the edge of a plate, sprinkle with chives, and season with herb salt and pepper. Place the salad in the center of the plate.
