Ingredients for 1 servings:

  • 100 g sweet potatoes
  • 10 g walnut kernels
  • 10 g hazelnuts
  • 10 g lupin flour
  • 10 g chickpea flour
  • 2 pinches of baking powder
  • 1 egg(s), size L
  • 2 tbsp extra virgin olive oil
  • 1 pinch of salt

Peel the sweet potato and cut into small pieces. Place the walnuts and hazelnuts in a food processor and roughly chop. Then add the sweet potato pieces and finely chop them together. Empty the food processor into a bowl, add all the other ingredients, and mix thoroughly. Bake in a preheated waffle iron. The batter is very dense, but bakes wonderfully. I had a waffle iron with two square pans. The batter is just enough for one filling. I served it with tzatziki as a side dish. I like savory food.
