Cucumber and carrot salad

Ingredients for 3 servings:

  • 1 cucumber(s)
  • 2 carrots (grated)
  • 1 small onion(s) (diced)
  • 65 g natural yogurt
  • 1 tbsp vinegar (e.g. elderflower or raspberry)
  • 1 tbsp oil (herb oil)
  • 1 piece(s) ginger (approx. 1.5 cm)
  • salt and pepper
  • some sugar
  • some lemon juice
  • some chives (fresh)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

refreshing and light

Place the diced onions in a bowl. Add salt, pepper, squeezed ginger, sugar, and lemon juice, then drizzle with the vinegar and oil and mix briefly. Then stir in about 1/2 cup of natural yogurt. Peel the cucumber and finely grate it, along with the carrots, and toss both with the salad dressing. Finish with finely chopped chives. Let the salad marinate for a while before serving.
