Cucumber and radish salad

Ingredients for 4 servings:

  • 1 cucumber(s)
  • ½ bunch radishes
  • 1 small onion(s) (white)
  • 1 bunch of dill
  • 1 tbsp tarragon, dried
  • 1 tbsp vinegar (raspberry vinegar)
  • 1 tbsp rapeseed oil
  • 3 tbsp sour cream
  • ½ tsp soy sauce
  • salt and pepper
  • Mustard

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely dice the onion and place it in a salad bowl. Add salt, pepper, mustard, and tarragon and mix with the tablespoon of vinegar. Then add the soy sauce and oil and mix again. Finally, stir in the sour cream and finely chopped dill. Slice the washed, unpeeled cucumber into very thin slices using a mandoline and add it to the salad dressing. Add the radishes, which have been finely sliced. Let the salad marinate for a while (half an hour). It goes perfectly with schnitzel or grilled food.
