Cucumber and salmon bites

Ingredients for 8 servings:

  • 200 g double cream cheese
  • 200 g smoked salmon
  • 1 tbsp curd
  • 1 tbsp salad mayonnaise
  • 2 tsp lemon juice
  • 1 tbsp chives
  • 1 tbsp parsley, chopped
  • 1 sprig(s) thyme, fresh
  • salt and pepper
  • 1 cucumber(s)
  • e.g. dill tips, diced red peppers or chives

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Stir the double cream cheese until smooth. Cut the smoked salmon into small cubes and add to the cheese along with the quark, salad mayonnaise (e.g., Miracle Whip), lemon juice, chives, chopped parsley, and fresh thyme leaves (preferably lemon thyme). Stir in, season with salt and pepper, and beat with a hand mixer for one minute until creamy. Wash the cucumber thoroughly and cut into thick slices. Place a teaspoon of the cream cheese mixture on each cucumber slice and garnish with fresh dill, chives, or small diced bell peppers. Tips: The cheese and salmon mixture can be prepared the day before. However, slice and decorate the cucumber shortly before serving, as otherwise the cucumber slices will dry out too much. The cheese and salmon mixture also tastes delicious as a spread on bread.
