Cucumber-dill melted cheese sauce with garlic

Ingredients for 2 servings:

  • 175 g cucumber(s)
  • 1 corner(s) of processed cheese
  • 1 tbsp dill, chopped
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 tsp soy sauce
  • 2 garlic cloves, squeezed
  • 300 ml vegetable broth, homemade

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Roughly dice the cucumber and place it in a blender with all the ingredients except the dill and garlic. Blend on high for one minute. Transfer the contents to a saucepan and bring to a boil. Then cook over medium heat for another 10 minutes, stirring frequently. Add the garlic and dill two minutes before the end of cooking. Season to taste and serve. This sauce pairs best with salmon, rice, and pasta dishes.
