Cucumber-potato-minced meat pan

Ingredients for 2 servings:

  • 400 g potatoes, pre-cooked
  • 1 ½ cucumber(s)
  • 180 g minced beef, 5% fat
  • 1 cup sour cream, 10% fat, 150 – 200 ml
  • salt and pepper
  • Vegetable stock powder
  • olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Peel and deseed the cucumbers, halve them, and then slice them. Dice the precooked potatoes. Fry the ground beef in olive oil until no red spots remain. Add the potatoes and cucumber and fry everything together. Season with salt and pepper. Once everything is well cooked, add the sour cream and simmer until the cucumbers are soft. Season with vegetable stock powder to taste.
