Cucumber-potato salad

Ingredients for 4 servings:

  • 400 g potato(s), waxy
  • 1 small onion(s)
  • 50 ml vegetable stock
  • 2 tbsp vinegar (wine vinegar)
  • salt and pepper
  • 1 small apple
  • 150 g cucumber(s)
  • ½ bunch chives
  • Sugar

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour; Total time approx. 2 hours

Boil the potatoes in their jacket potatoes for 20 minutes. Dice the onion. Cook with the broth for 1-2 minutes, then add the vinegar, salt, pepper, and sugar and season to taste. Peel and finely dice the apple and add it to the hot dressing. Peel the potatoes, slice them, pour the dressing over them, and chill for 1 hour. Then thinly slice the cucumber and slice the chives. Stir in the dressing.
