Ingredients for 1 servings:

  • ¼ cucumber(s)
  • ½ tsp salt
  • 125 g soy yogurt (yogurt alternative), unsweetened
  • ½ piece(s) onion(s), finely chopped
  • ½ tbsp lemon juice
  • ¼ tsp coriander powder
  • 0.33 bunch coriander greens, chopped

Instructions

Working time approx. 15 minutes; Rest time approx. 20 minutes; Total time approx. 35 minutes

vegan dip

Wash the cucumber and chop it very finely, unpeeled. If you like, you can mix it with the salt and let it steep for 30 minutes, then drain the resulting water. But it’s not necessary. Mix the cucumber pieces with all the other ingredients and let it steep for at least 20 minutes. I’ve already eaten this raita with chickpea and zucchini rösti and with barbecue.
