Cucumber and Tomato Raita

Ingredients for 4 servings:

  • 1 large tomato(s), ripe
  • 200 g cucumber(s)
  • 250 g yogurt
  • 1 tsp cumin powder
  • ½ tsp mustard seeds, brown
  • 1 tbsp oil
  • salt and pepper
  • Coriander leaves or mint, optional

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

easy Indian cooking

Wash the tomatoes and dice them finely, removing the stems. Peel the cucumbers and finely dice them. Mix both with yogurt, cumin, salt, and pepper. Heat the oil in a small pan or saucepan and fry the mustard seeds until they begin to pop. Add to the salad and mix. Stir in coriander or mint, if desired. Let it sit in the refrigerator for at least 1 hour. Serve with: Kathi-style chicken and naan bread (you can also find the recipes on my website/profile).
