Ingredients for 1 servings:
- 1 cucumber(s)
- 2 onions, red
- 200 g rock sugar, white
- 250 ml vinegar (honey vinegar)
- 2 tsp sea salt
- 2 tbsp mustard seeds, yellow
- 1 tsp dill seeds

wonderful with grilled meat, very aromatic
Peel the cucumber and onions, deseed the cucumber. Finely dice everything. Combine all ingredients in a saucepan and bring to a boil. Then simmer over low heat until the liquid has evaporated. Stir frequently, as otherwise it might burn. This can take up to 2 hours. While still hot, pour into prepared jars and seal immediately. Cool upside down to create a vacuum. The relish will keep for up to 1 year. The honey vinegar can be replaced with white balsamic or white wine vinegar. The dill seeds are available at garden supply stores.
