Cucumber salad with dill and feta

Ingredients for 2 servings:

  • 1 cucumber(s)
  • 80 g feta cheese
  • 2 tsp dill, fresh, chopped
  • 2 tsp lemon juice, freshly squeezed
  • 1 tsp balsamic vinegar, white
  • 2 tsp olive oil
  • 2 tsp oil (grape seed oil)
  • Salt
  • black pepper, freshly ground
  • 1 pinch(s) of cayenne pepper
  • 1 pinch(s) of sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the cucumber and halve it lengthwise. Scrape out the seeds with a teaspoon and cut the cucumber halves into pieces. Crumble the feta and add it to the cucumbers. Make a dressing with lemon juice, vinegar, both oils, salt, pepper, cayenne pepper, and sugar. Add the dill and dressing to the cucumbers and feta cheese. Mix well and let it sit for a few minutes. Note: Since the cucumbers release water, which may water down the salad a bit, you may want to adjust the seasoning before serving.
