Mixed salad with cheese

Ingredients for 2 servings:

  • 1 cucumber(s)
  • 1 bell pepper(s), red or yellow
  • 1 can of corn
  • 1 onion(s)
  • 200 g cheese (Gouda)
  • 5 tbsp oil (safflower oil)
  • 1 tsp vinegar
  • Salt
  • pepper
  • 1 tsp mustard, medium hot

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes

Cut the Gouda into small cubes. Mix the oil, vinegar, mustard, salt, and pepper to make a marinade. Marinate the Gouda in a bowl. Thinly slice the cucumber, ideally directly onto the cheese in the bowl, then add a little salt. Dice the bell pepper and onion and add them along with the corn. Mix everything together and let it sit for at least 45 minutes.
