Great as a side dish to my fish cakes
Peel the gherkins and halve them lengthwise; remove the seeds with a spoon. Then cut them into half-moons about 2 cm thick. Cut the bacon into small cubes and fry them in a pan over medium heat. Add the butter. Finely chop an onion, add it to the pan, and fry. Add the cucumber pieces and season with salt and pepper. Fry the cucumbers and deglaze with chicken stock. Simmer for about 10-15 minutes, depending on how soft or firm you like the cucumbers. To thicken, mix one part flour and one part butter together with a fork. Add enough to the cucumber mixture until it thickens to a creamy consistency, then simmer briefly. Add the chopped dill and turn off the heat. When it has stopped boiling, add the sour cream, season to taste, and serve!
