Curly-breasted fried rice

Ingredients for 1 servings:

  • 100 g mushrooms (curly hen/fat hen)
  • 1 spring onion(s)
  • 1 garlic clove(s)
  • 1 cup(s) rice from the previous day, approx. 200 g
  • 1 tbsp soy sauce
  • 1 tsp fish sauce
  • some salt
  • 1 egg(s)
  • 1 tbsp rapeseed oil
  • 1 tbsp butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Fat Hen

Remove the fresh curly hen, also called fat hen, from the forest floor and remove any small creatures it may have. Cut off the stalk and cut into small pieces. Separate the leaves into small florets. Slice the spring onion into thin rings. Finely chop the garlic, but do not press it. Heat the oil in a pan and fry the curly hen/fat hen until it turns brown. Add the garlic to taste and fry briefly. Now add the rice and mix. Then add the butter and spring onion. Make some space in the middle of the pan and add the egg. First whisk the egg briefly, then fry everything again. Season the fried rice with a few drops of fish sauce, a little salt, and the soy sauce, and enjoy immediately while warm.
